I suspect that Linksys has several models and will make the rash assumption that your Linksys is the same as mine. As far as I know, the Linksys is capable of handling only one IP address.

If you require each domain to have its own IP address, then I don't see how it can work. However, there is no requirement for a unique IP address for each domain. Have your final MX record for each domain point to the name of your SIMS machine. Then in your SIMS router place lines like:

*.otherdomain.com = otherdomain.com
<*@otherdomain.com> = *

The first line says anything like mail.otherdomain.com or www.otherdomain.com, etc. it to be handled as if it was otherdomain.com. The second line says any account on otherdomain.com is local.

You might want that second line to read something like:
<*@otherdomain.com> = *-otherdomain

Which would say that otherdomain.com is local but all of the account names are of the form name-otherdomain.

You can also setup many web servers (including the version of Apache in OS X) to handle multiple domains on one IP address. But that is a slightly different issue.
