If you leave the SMTP server logging on level 4 or 5 (Low Level or All Info, don't remember which) you should capture the entire SMTP transmission in the log, including the text of the mail.Level 4 on SMTP server logging doesn't show the content Level 4 what I have our servers set to do so that we can record the outgoing SMTP banner for proof of notice re: CA anti-spam law.
