You can address this by using MailBurst.

MailBurst lets you set the Autoreplies' From, Reply-To, and Subject to what ever you like. Custom for every user.

Has supported SIMS for many years.

MailBurst has lots of other functions too, but our users usually find one is more of a driving factor.

This is the question that caused me to join this list around 4 years ago.
The answer then as it is now is that there is no way to fix that within SIMS
itself.
