Let's stop right here.

As long as you have a static IP address (as you seemd to note later
in your post), why not simply use it?  After all, with the offsite
provider, you have a situation where you've got to pay them (or at
least wait) for changes, they control the blacklist (if any), etc. -
essentially, you have NO control.

A "catchall" account will become just that - and, believe me, you
don't want what it will catch.  (And, BTW, it won't work.)

Just redirect mail.ourdomain.com to your [12.34.56.78] address,
set up SIMS to handle all your mail, and don't worry that your
offsite provider's "generous" offer of x e-mail addresses in
your own domain is "going to waste."  Frankly, with the tools
available, they could set it up self-maintained via a web site
and give you virtually unlimited accounts with very little impact
to them.  Luckily, you have SIMS available to you.
