Would an "unknown" account receive all the mail for every unknown
account, for every domain on the machine? This would include
dictionary attacks, bounces with faked return addresses from
non-existent accounts at domains hosted on that machine?

Or would it only collect mail to unknown accounts for the main domain name?

In most cases, there is no difference on a SIMS machine. Typically, accounts in secondary domains are mapped in a wildcard fashion to mailbox names that are accounts in the primary domain.
