But that didn't seem to stop the outbound email. That only caught the inbound. I also needed to capture the outbound mail.
oops, sorry, I missed that nuance. Not sure there is a cleaver solution for what you want to do. There is another option (SMTP, I think) to send all mail to a gateway instead of to individual recipients. On that gateway you could set up another copy of SIMS. Then on that second one:
