Can you also modify non-SIP-URL part of "From" and "To" (excluding the Tag
param) headers in subsequent messages? From example, in initial INVITE we
have: From: "A. G. Bell" <sip:[EMAIL PROTECTED]>. Can we have in 200
response or ACK like this: From: sip:[EMAIL PROTECTED] ?
It seems to me that byte-by-byte is more robust and easier to compare in
terms of "From" and "To" headers. What are the potential reasons that
somebody wants to modify these two headers in addition to the "Tag" param?

That will work, yes. You can also modify the URL during copy such that the
two would be equal under the URL comparison rules, since it is these rules
that other elements will use to compare the URLs in these headers.
