The definitive source for SIP is http://www.cs.columbia.edu/sip.

There are several papers to date on the topic of sip v. h323:

http://www.cs.columbia.edu/sip/drafts/sip_h323v4.doc
http://www.cs.columbia.edu/~hgs/papers/others/Dalg9909_Comparison.pdf
http://www.cs.columbia.edu/~hgs/papers/Schu9807_Comparison.ps.gz

Although some are out of date, certainly our 1998 paper is barely applicable
any longer. There are a few others; try citeseer
(http://citeseer.nj.nec.com/cs) which is an invaluable resource for any
academic work.
