Ethereal does this itself after the .10.2 version I think. I think if you look under statistics, there should be a VoIP Calls menu item. This will popup a window that lists all the calls detected in the trace and you can then graph them how you want. It's quite good.
I'm not sure how to dump the output to a file for printing but you can always take a screenshot using xv or something if worse comes to worse.
