       Problem: Lets say a user has a IP phone and a video camera on their
   laptop. In order for the user to have a voice and video conversation two
   SIP sessions must be set up, one to the phone for audio and one to the
   camera for video. My question is how often does this happen in the real
   world. Are there lots of deployment models that require two or more SIP
   sessions for each participant?

Strictly speaking, there is no reason to need two SIP sessions -- one
session can have multiple media streams.
