Davide, I don't know why you are getting the unexpected messages, that is likely based on your OpenIMS configuration.
I have seen incorrect checksums when tracing SIP traffic with Wireshark; but they have never caused me problems. SIPp isn't involved in the UDP checksumming, and my guess is that the kernel does not apply the checksumming algorithm at the time Wireshark sees the packet; or maybe it is offloaded to your Ethernet card.
