Yes,
You can perform headers checking & analysis when receiving sip INVITE messages,
on UAS side, with something like the following:
<recv request="INVITE">
<action>
<ereg='some regexp to look for'
search_in="hdr"
header="Contact:"
assign_to="1,2"/>
</action>
</recv>
