SIPp doesn't provide an embedded OPTIONS scenario. So you must write one
yourself. But it is very easy, you don't even have to bother reading the
docs (but of course it is recommended if you are working seriously with
SIP):

Just dump the uac scenario and convert it from INVITE to OPTIONS:
sipp -sd uac > uac.xml
