Since there is no schema for siptrace files, the "official" difference between <destination> and <destinationAddress> (and <source> and <sourceAddress>) isn't well-defined. But generally, the concept is that <destination> is the symbolic destination (e.g., "sipXproxy") and <destinationAddress> is the host:port (e.g., "10.1.1.25:5060").
Up until now, there has been more emphasis on getting the <source> and <destination> elements to contain human-usable labels whenever possible, so it's not surprising that the <*Address> elements are not particularly usable.
