I think that #1 (everything on one screen, no "Advanced Settings") is
simpler.  

While you're at it, the explanatory text on some of those actions could
be better:

      * All of them specify a DTMF sequence, so move that fact to a
        label above the settings rather than repeating it in every one:
                "DTMF commands to be entered by a conference
                participant"
                
      * The "Deaf mute code" label and text are not clear.  I'd suggest
        "Toggle all audio" and "Toggle audio both from and to the
        conference".

      * Few users probably understand what 'Energy' implies.  I'd group
        them together under a label these as "Voice activity detection",
        with individual settings for "Increase Sensitivity" "Decrease
        Sensitivity" and "Reset Sensitivity to Default" (if that's not
        what they do, then that just illustrates my point).

      * The "Volume UP" explanation should be "Increase the volume of
        audio from the conference"

      * The "Talk vol. DOWN" should be "Microphone Gain" and the
        explanatory text should be "Decrease the volume sent to the
        conference"

Do we really need a Hang up code?  What's wrong with just hanging up?
If it's harder to get rid of it than to keep it, I guess that text is
ok.
