Hi,

I am using ESX for testing SipX and ran into the same issues.
What I found worked was a combination of two things, be it right or wrong it 
doesn't matter.

When you create the machine select a Windows Server 2003 machine and create the 
bare machine.
Once created edit however you want like processors, memory etc.

Attach your SipX ISO and when you get to the initial setup page type 
manual-format and follow the directions making sure you remove all partitions 
on the disk.

That works every time and I have installed and uninstalled etc hundreds of 
times.
