Dan,
I have an Intel D945GCLF-2 (dual core 1.6 atom board) with 2gb of 667 ram. The office has around 11 workers and the system load average is less than 5%. This is deployed in a casual office environment and they don't have tremendous phone usage. Once CentOS has loaded and JAVA starts handling its business the CPU's get taxed, but that's about the only time I see the resources stretched. The low power consumption and small form factor has really been an elegant solution. I wouldn't deploy this in an office with high call volume if you are using SIP trunking.
