For customers that prefer G.729 we simply set the ITSP and the phones to use G.729 first and G.711u second.
Calls that go to phones will be neg at G.729. When a call is sent to anything SipX related like Autoattendants, voice mail etc it will negotiate at G.711u. Thats about the best you can do.
