For customers that prefer G.729 we simply set the ITSP and the phones to use 
G.729 first and G.711u second.

Calls that go to phones will be neg at G.729.  When a call is sent to anything 
SipX related like Autoattendants, voice mail etc it will negotiate at G.711u.

Thats about the best you can do.  We still prefer G.711u over G.729 even over 
slow wan links because its far less susceptible to jitter and delay...which is 
typically harder to control than bandwidth.

What codecs are supported by sipx?  G711 ULAW only or does it support G729?
