About a week ago I was trying to do a very similar thing (put sipXecs on a 
multi homed box). You can solve DHCP issues easily enough (configuration of a 
DHCP server isn't part of sipxecs, if that's your only problem I can help you 
set up ISC dhcpd or DNSMASQ) but I was advised by several folks on this list 
that sipXecs has a number of issues running on a box with multiple interfaces 
and isn't designed to do so.

I got one comment that Nortel sells a commercial version of sipxecs that *does* 
work multi-homed so someone has gone down this road and fixed the various 
issues but not in the open source version.

The first non-setup problem I ran into fwiw was that the freeswitch config 
files were being generated in such a way as to cause freeswitch to internally 
bind to the 'wrong' ip address. This is easy enough to fix but I didn't want to 
go deeper down the rabbit hole.
