I think if you look in sipxconfig.log you will see ssl errors. In order to succcesfully change IP and sipdomain, ssl stuff needs to be done independently of running the setup script.
I've always found it easier to start over. As an example, if you change your domain name, your pin tokens change. Restoring the data you have now leaves you in an inconsistent state. Restoring the data as is now to a new install will require a manual pin reset of all user. If your install is not complex, consider exporting users/devices, and starting over...
