When you specify the phone, it loads a preconfigured template that is designed for that phone. I'm not convinced the snom templates are updated much, but maybe someone else can chime in.
SipXecs registers the end point, which is the snom phone. When you go into Diagnostics, Registrations, do you see the snom registered? If not, you will have to start there with your troubleshooting.
