I think Mike is misunderstanding and mixing up protocols here. He states his calls are coming in over a PRI. They are digital trunks, utilizing qsig or some other standard ISDN protocol, ran over PCM and terminates to your Mediant. Your Mediant converts the PCM to SIP with some sort of codec for compression or not - G711, G729, whatever you set it to. Your faxes should arrive on that PRI as a t.30 protocol. They need to be converted to t.38 for sipxecs, which I assume your gateway is capable of doing (Licensing?). Mediant is able to recognize the standard G3 or whatever fax protocol you are using from the far end and transmitted via T.30.
Set Mediant to support T.38, and sipXecs will recognize the call if set to the correct alias for the extension you want it sent to. It will convert T.30 to T.38. I've never found g711 very reliable. Thusly, sipx aims to use t.38 ONLY because it is really the ONLY way to transmit or receive faxes via sip. If you had a traditional PRI this would also work very well already.
