The STUN you may have read about is for determining the 'outside' ip address when setting up outbound NAT traversal and it sounds like you'll have that disabled on your system.
As Tony indicated you will probably want to set media relay to aggressive so as not to anchor media on the server. Also as Tony indicated, a commercial SBC may be in order.
