I think we've done a commendable job of hijacking this thread. ;)

Actually Mike, I think you've just led me to why media is being
anchored through the proxies, and it is not a sipXecs/openUC issue.
For remote workers, we have to anchor media *somewhere* (except for
remote-to-remote calls), and I believe our ingress points config is
the culprit - forcing media through the proxies.

Once I work around this, running the distributed server role on a vm
should not be a problem.
