Confirmed-- the stupid Procurve 2848 switch does NOT have jumbo frames enabled by default. That was the cause.
Weird thing is, I've had tons of servers (all gig) on this switch for years-- it's something about the nics in the sun x2100 that are different enough from the HP servers I have that tripped this all up.
