There are a number of specialized pieces of software for the Macintosh that
do this.  These are what are called "PDF Services", and the install into a
folder of that name (PDF Services) in the user's Library folder.

If there is no such folder, then you may create one.  There is a folder by
that name in the default OS install, however.

You will see the PDF Services themselves in the standard Mac print dialog.
There is a button, at the lower left of the print window, which says 'PDF',
with a small drop-down arrow/menu.

Those items are the items represented in your PDF Services folder.

So, I alluded to making 'booklets' in an earlier post, which is generally
what we're talking about.

I prefer to use a tool called 'CocoaBooklet', which you can get here:

Also, you could use 'Create Booklet', a similarly oriented tool:

I can not speak to the differences between, but I have installed and used
both of them with success.
