One day, someone who is really really interested in doing so could 
extend Skim so that it could use Poppler:

along with (or instead of?) PDFKit. That would go a long way to making 
it cross platform.

Note that this is what the TuG guys have done with TeXWorks, which is a 
cross-platform TeX editor based on the OS/X TeXShop. (both TeXWorks and 
TeXShop have an embedded PDF viewer, which makes them standout and lets 
them be multiplatform)
