Yes, PDF > PDF Display > Book Mode.

You can save this as the default (together with other PDF display  
settings) using the last PDF menu item.

In fact Preview is wrong here in 50% of the cases, because it does not  
allow you to change this. It happened to be correct for you, but it  
could just as well haven been wrong.
