Actually, this sounds more like a problem with your launch services  
database. I think some other program conflicts with Skim for declaring  
the DVI type (because Skim doesn't declare the description "DVI  
Document"). Perhaps resetting LS will help, type the following in  
Terminal.app on a single line:

/System/Library/Frameworks/CoreServices.framework/Versions/A/ 
Frameworks/LaunchServices.framework/Support/lsregister -kill -r -all  
local,user,system
