Re. your point 2). Yeah, but its so naff, I don't believe it's even remotely acceptable. I haven't thought about the problem very much but it should just be a case of including an extra chart projection. You can currently do Polar and zenithal, so adding ecliptical shouldn't be a major problem. Sounds challenging, so I'll add it to my todo list once I've finished doing my nebula colouring edits.
Having the source code to customise CdC to do exactly what you want it to do is really cool. Re. your point 3). Not that I know of. How would you want such a feature implemented? That is, if it were to be included as a new feature, where in the CdC menu system would you expect to find it? I usually think of these things as 'diary' functions, but that is not necessarily a useful metaphor. Also I found www.skyviewcafe.com, which is helpful. 2) But is the following similar? If I look at Polar Projection with field width>270deg, I get a flat representation of the sky (I'm not really sure how to interpret where I am looking from) with the ecliptic oscillating up and down around the center. The planets, sun and moon seem to appear in the left to right order I expect. So it seems I am seeing the view from earth (but from where on earth?) of the current relative position of the planets, right? Not the orbits but the next best thing. This view is pretty cool too because animation reveals the retrograde motions. 3) Is there any way to determine max planetary elongations?
