As of now, Cartes does not have the ability to track deep-sky objects on screen, although it can be done with solar system objects.
You can limit the magnitude of a chart by either using the buttons on top of the (default)screen, to the left of the 'Night vision' button or you could change it to a particular value under Parameters -> Catalog and Object Parameters.
