Open the menu Preferences - Labels - Options... To totally remove this label remove the check box for Star. Labels for the nebulae or planet are still present if checked.
To remove most of them, increase the value in "Limit magnitude" column, 5 may be a good value. To replace the long name by the star magnitude remove the Name checkbox and check Magnitude.
