First, make sure you use "polar projection" rather than "zenithal". That's the icon with two blue arrows in the right toolbar.
Click the stopwatch icon in the upper left toolbar. This gives you the same settings as using "track object", but now the sky stays fixed (when using polar projection), while any solar system objects move.
