My copy of v3 is an older "alpha" version, but if things havn't changed since 
then, the icon is in the right toolbar, near the top.  All the icons there are 
blue, but look for the one where when you hover your mouse over it it says 
"change coordinate system".  There are four options in v3: equatorial (called 
"polar" in v2.x), alt-az (called "zenithal" in v2.x), galactic, and ecliptic.  
The one you want is alt-az.  The name of the coordinate system is shown in the 
menu bar at top, just after "help".
