Hello Andy,
first of all, pardon my translation of the voices as my device is in Italian
so it could not correspond. Anyway, on the bottom of the main Skype page you
will find four tabs: People, Recent, Call, and My info. Select this one, and
then there is a button for changing your status.
For not needing to do it again, what I recommend you to do is to go to the
iPhone Settings, Skype, go Offline, set it to never. Once you've done this,
when you don't want to be online you simply close Skype from the
Applications Switcher.
