How about adding a copy/pastable line to bottom of the README with all
the environment variables set to yes? Something like:

To build with all optional dependencies, run:

ASS=yes BLURAY=yes CELT=yes DC1394=yes FAAC=yes \
FREI0R=yes GSM=yes IEC61883=yes ILBC=yes JP2=yes \

That would save a lot of typing for anyone wanting to build with all or
most of the dependencies.
