Whats better to use IP Chains or IP Masq, in the past I have been running IP
Masq, it works ok but I get loads of unresolved's on boot, but I have not
bothered t o check why.

I trust the question is:
To IPCHAINS or to ipfwadm?
The reason I ask is, because you can also IP masquerade with IPCHAINS, as
well as ipfwadm.
Also what does: "unresolved's on boot" mean.
As for your core question: What's better to use?
I prefer IPCHAINS, now. In the beginning (RH5.0 for me) I was a little
daunted by the many options and the flexibilty IPCHAINS, but it is much
better then ipfwadm or even ipfw.
