2 ethernet cards meaning 1 in each PC?  You don't need 2 in the server.
Video card isn't necessary once you have it all setup *nods*

Cheap PCI cards aren't expensive though, and I usually leave S3 Trio 32/64
cards in my servers, just incase I bugger up something important like the
network interface :)
