GTK+/Gnome Application Development by Havoc Pennington
You can get it in meatspace, or online:
http://developer.gnome.org/doc/GGAD/
Devour it, and keep your IRC client pointed at irc.gnome.org/#gnome, as
there are a fair amount of people to aid you when you hit one of those brick
walls that seem to crop up. :)

If you're not really all that fussed about C, you ought to have a peek at
Python and Ruby. Both are scripting languages, and support GTK+/Gnome
development.
They're certainly fun to prototype your apps with. I wrote a little panel
applet in Python in half an hour (with a little scavenging from the examples
of course).
Of course, one of the best ways to learn what's going on is to dive in and
read the source of one of your favourite apps. You'll find yourself sending
off patches in no time...
In fact, I keep saying that I can't code in C, but after reading the
mod_virgule source (Advogato's backend) for fun and research, and then
GnomeICU, I ended up sending off a couple of small patches. :D
