I fail to see how Delphi is a real-work environment, rather than a GUI
building environment.

C is fine.  C will do everything. Similarly, C++ and ObjC can also do pretty
much everything.  Glade provides a GUI editor for C & GTK, and C++ & GTK.

Java works if you want to write your code and just carry it onto over Sun
JVMs.  Thre is a `Free' IDE with a GUI Editor out there too [Sun Forte
Community Edition].

Perl is your instant glue.  If you're telepathic, you can use the Perl/GTK
bindings for GUI work, otherwise you can use Perl/Tk.

Tcl is your instant embeddable glue.  Tk provides the GUI.

Why do you need more?
