You might want to look at man chat. I think the something like
chat -v -f ....
may be what you want.
The -v gives verbose output to the logfile including text sent to
and received from the modem.
As in:
ttyS0 115200 crtscts
connect '/usr/sbin/chat -v -f /etc/ppp/my-chat'
defaultroute modem
