You are going to need to regenerate the stunnel pem certificate...
something like....
openssl req -new -x509 -days 365 -nodes \
-config /usr/share/doc/stunnel-3.14/stunnel.cnf \
-out /etc/stunnel/stunnel.pem -keyout /etc/stunnel/stunnel.pem
make sure the "common name" or "your name" option exactly matches the
new server name...
