Talk to your friendly local Exchange admin about whether or not you can
get IMAP access to the server.

If so, then you can use fetchmail, or the built-in IMAP support in your
mail client.

If, for whatever reason, you can't use IMAP, then it may be worth
investigating evolution.  There's a proprietary extension, called
Connector, that will let you do pretty much everything with an Exchange
2000 server that you can do with Outlook.
