Well, you did ask for opinions... :-)

My preference is postfix, as it is very straight-forward to configure (if
you grok how MTAs work in general), is amazingly powerful, standards
compliant, bloody fast, and best of all, it has a brilliant project lead in
Wietse Venema.

Lots of great documentation on postfix.org, enormously helpful user's list
(when you have a problem, and for general reading), and there are lots of
people writing support stuff for it, such as scalemail, amavis, spamassasin,
etc.
