Yeah, this is fine, but please note that they'll only run in single-ended mode [not LVD]. All LVD disks support this, though. Your disk will be limited to 40MB/s, rather than what it's spec'd to run on (Ultra2 (80MB/s), Ultra160, or Ultra320).
I have a Maxtor Atlas 10k III running off of a Tekram (Symbios based) UW card.
