A solution I have implemented elsewhere:

Postfix mail server

Amavis perl-based or even  daemon-based unparceller/scanner caller

Sophos sweep works well on Linux servers. I'd check out kaspersky too,
their AV is much cheaper for a big install.  Also their support seems
great (based on a result set of 1). A client of mine has their windoze
version and emailed a problemo at 1am, someone answered at 1:03am.

If you are a belt/braces/'string in pocket' type, get AV for the desktop
too. This would be more for if someone came in with a floppy or download
a Virus from a website.
