You might find it worth talking to Geoffrey from Granville TAFE, the guy
that runs the linux courses. I just went through the basic course which used
moodle.

I've been meaning to check out moodle (http://moodle.org) for some time, 
but haven't got around to it yet, so I can't say how good it is.
