Just a quick follow-up since it was a vaguely unusual configuration and
I thought someone else might find this helpful. I ended up installing
Fedora Core 1, simply because there was no obvious way to get the
Mandrake installer to do RAID. Unfortunately there was no obvious way to
get the FC1 installer to do XFS or reiserfs, so I'm currently stuck
using ext3, but I made enough partitions to be able to rectify that once
I get xfsprogs and an xfs capable kernel.

I only had two problems really -- the first one was that my computer
wasn't recognising the SATA drives. That ended up being because the
drive enclosure things I bought had two SATA sockets on the back of them
which I assumed routed to the same place internally (I mean it's a case
for exactly one hard drive, where else would it go?). My assumption
ended up being false, and plugging the drive into the "other" socket
solved that problem. That was pretty confusing for a while. Once I'd got
the drive physically connected, the HPT374 controller found it and that
was all dandy. They appeared to both the Fedora and Mandrake installers
as /dev/hde and /dev/hdg. The FC1 RAID stuff in the installer was easy
enough to use. Post install my machine wouldn't boot. It said "no
operating system" or similar. That ended up being a case of going into
the HPT374 setup and telling it that the "other" drive was the boot
drive. At some point I'll look into getting grub to install on both
drives, but for now it's up and running and I'm happy :)
