You have found my favourite topic that I know least about! Nigel McFarlane (aussie) wrote the most recent book on XUL "Rapid Application Dev with Mozilla", which I bought thinking I was to do my software project on XUL. Its downloadable here:

OReilly has the first XUL book, which is free to download, (also avaiable in XPI, but i can find it when i need it.**)

I guess your after dynamicfying your XUL, forms et all with XUL are not that easy, one hack I saw was to do all entry via standard xul, but have the form submission via <html:form>. Apart from that I haven't really given XUL a thrash on a web server.
