- From the compose screen you can do:

i       ispell                  check spelling (if available on your system)

And if you're using aspell or some such you will want to set the ispell variable in 
your muttrc.

6.3.92.  ispell

  Type: path
    Default: "/usr/bin/ispell"

      How to invoke ispell (GNU's spell-checking software).
